Lochlander Salmon Fingers with Honey Dill Sauce
Ingredients
- 2 large skinless Lochlander Salmon fillets, cut into strips
- 2 large eggs
- 1 cup panko breadcrumbs
- 1/4 cup plain flour
- 200ml vegetable oil
- Salt
- Freshly ground black pepper
- Lemon wedges, to serve
- Mushy peas, to serve
- 2/3 cup mayonnaise
- 1/3 cup runny honey
- 1 tsp dill, finely chopped

Sift the flour onto a plate or into a wide bowl, beat the eggs in another bowl and place the breadcrumbs in a third. Season each with salt and pepper.

Dust the Lochlander Salmon strips in the flour, then in the beaten eggs and finally in the breadcrumbs. Make sure they are evenly coated so no salmon flesh is showing.

To shallow fry, heat the oil in a large frying pan on a mediumhigh heat and fry the Lochlander Salmon fingers for 3-4 minutes each side or until crisp, golden and cooked through. Drain well on kitchen paper.

Meanwhile, prepare the honey dill dip. Mix together the mayonnaise, honey and dill then place in a small bowl or ramekin. Serve with a side of mushy peas and wedge of lemon to drizzle over the salmon fingers.
